What defensive coordinator recently had a mediocre college football team put up 500 yards of offense?

Here are your hints:
1. His defenses are often characterized as being inconsistent, very undersized, not particularly fast, lacking physical strength, and poor tacklers

2. His entire coaching career as a defensive coordinator has not yielded strong defensive teams even with good talent. Even as a winner of a national championship, his defense was often bailed out by a powerful offense led by a Heisman Trophy winner.

3. The school he coaches for seems somewhat afraid to fire him due to him being a standout player for the school and his loyalty.

Who is this poor coach?

I thought the defense has been fairly decent and consistent throughout the season and especially improved against the run. That's why I'm so disappointed in how they played today. The offense has been pretty notorious for only playing a half of really good football at a time, so it's not like anything new happened today, but the 60 minute defensive collapse today was horrible. Some excuses may be made because of injuries, but for Roof to only rush three and play that soft zone on the 4th and 7 at the end of the First Half... there's no excuse. It wasn't 4th and 17. That's 4th and 7. You've got to at least rush 4 and try to keep them honest. It was all Duke from that play on.

Just like old times today

Roof can’t win at Wallace Wade.

Roof's D at Penn St. was pretty good.

Coaching is only part of it.
