I heard that they have a little guy in the computer that rolls a 6-sided die.

Because you can't retrain the data as the season goes along in EA. Maybe week 1 you can find something. But even Ken Pomeroy, Jeff Sagarin, none of these guys can keep up. I've heard bookmakers straight up admit they use KenPom numbers to set lines for mid-tier basketball games, and they still rake it in.
