Would that apply even in the end zone? If you don't touch the ball and it touches the ground in the end zone, it's not live but a touchback. But if you touch and drop it and fall on it... it's a safety?

It's only a safety if it was live outside the end zone but downed inside it, I'm pretty sure. It can be dropped and recovered any number o times inside the end zone otherwise. Still a touchback in that event.

Not a safety. The ball would have to come out of the end zone and returned back into the endzone for it to be a safety. But, fair catching it in the end zone is a dumbass move.
