What's confusing are the colors are Old Gold and White, but our mascot is a Yellow Jacket.

Someone correct me if I'm wrong but did we get the nickname Yellow Jacket because of the color of the jackets we wore and later morphed it to mean the insect?

That's exactly right. The Yellow Jackets were originally chosen as a color to show support for Auburn at an Auburn u(sic)GA baseball game in the 1890's. In part because it would piss off the pup's coach who cut gold from that school's colors since it was a cowardly color. By the late 1940's the Yellow Jackets was in use along with Golden Tornado and you start to see depictions of Buzz. I think it was 1971 wgen Buzz came onto the scene as a live mascot and the rest is history .
