I really don't think losing Sims would crash the offense next season. He is still mistake prone and injury prone. A new QB fit might be waiting in the wings.
I do not agree at all. Take a look at P5 game splits with Sims in vs out.
On a microcosm you could juxtapose just the UNC game splits for apples to apples. Here's a quote from the UNC Defensive Coordinator after our game:
“I think Sims is a really good player. I think Jordan Yates is a really good player,” Bateman said. “They ran the same plays.”
Bateman didn't mince words when asked about his defense's performance against Georgia Tech Saturday night.

Mack said he thought Sims was the difference in the game and I think most people would agree. Now, you could argue that he did dodge the three toughest defenses this year. I'm not saying he could have come in and did to them what he did to UNC. But even Mack Brown wondered what Sims could have done vs Clemson.
So yes, I disagree. I think keeping Sims is the most important thing right now. I appreciate what Yates has done for the program.
