Tashard Choice Rumors?

The biggest difference between an at-home burger and a restaurant burger is that at home most people use 90+% lean. Restaurants are closer to 80% lean or less. McDonald's is famously at 80/20 beef/fat.

I use 80/20, actually. Assuming that's what my butcher labels as ground chuck.

80/20 holds together better because of the fats. Lowest I go is 80/20. If you are cooking on a grill, 80/20 is the way to go. No risk of falling through the grate.
On my griddle, 90/10 has enough fat, in combination with the bacon sheen, to make a nice crisp.

I do cast iron skillet. Maybe I'll try 90/10. I don't normally cook up bacon though.

I've tried sous vide a couple times and finishing on the cast iron but it's not nearly as good to me.

90/10 may be too lean without the bacon cook. It doesn't release a bunch of fat.
My girlfriend just likes a thick, lean piece of meat. She keeps telling me that is what it is going to take to satisfy her, so I just keep trying with the 90/10 on the griddle. She does, every so often, sneak off to have 5 Guys. You'd think she'd be fatter.

Whataburger is good stuff. Not outstanding but definitely above average. I’d like to see them cut back on the bread, though.
 
I was going to post something I think I would probably feel bad about afterwards. Here is burger instead.

And this would be why I don't trust your opinion on anything food related. You store buns in the fridge, no matter how you warm them up your burger will taste even worse than McDonalds.

I don't think the debate on whether McDonald's even uses beef is settled.

Bread doesn't go in the fridge. Keep it out or put it in the freezer.

I wouldn’t say it’s expected just that I don’t think it’s as big a deal as you’re making it. He isn’t blackballed or whatever you were implying.

Lincoln Riley isn’t the industry. I thought you made a more generic comment Han you did. I would not expect Lincoln Riley to hire him back in the near future.
 
I've cooked burgers at home on the stove, in the oven, on a charcoal grill, on a gas grill, in smokers and in iron skillets.

When you have an In-Out Burger, that is when you realize the utter futility of trying to reproduce the unparalleled hedonistic experience of an In-Out Burger. My suggestion is to enjoy the Burger in the parking lot - trying to manage a vehicle at the same time is a very bad idea.

I think I read that article a few days ago, but didn't it say Riley was as much of a hypocrite for leaving suddenly after vehemently denying other rumors? I bet most coaches see it the same way, both parties owe what says on the contract, nothing more nothing less. It can change day to day...
