So GT's 08, 09 and 10 classes have each one player drafted (at least one).

(Same with 03-07 at least, don't think 02 had one.)
 
Oh and there's the whole cancer in the locker room thing and unneccesary drama that will come to the team that drafts Sam.

He's very quick off the snap, showing the ability to attack off the edge as well as the burst to penetrate through gaps. "I think Michael Sam is an effective outside pass rusher," Titans general manager Ruston Webster said at the Scouting Combine. "He has some strength at the point. But his main thing is getting up the field and rushing the passer and putting pressure on the quarterback. He was obviously very productive doing that.
 
That's better than many drafted DEs.

Those DEs are also physically larger. It's tough being undersized as a defensive lineman. It's probably better for him to go undrafted and pick the team to give him a shot at this point. Many pro bowl players went undrafted so it's not the end of the world.

Sam, Michael DE 6'2" 261 Missouri

how is 6'3" 251 4.8 much different from 6'2" 261 4.9 with proven work on the field that made you an All-American and SEC Defensive Player of the Year?

Honestly I think he would've been drafted if not for coming out (based on the reason noted in the post above).

His combine/senior bowl performance were bad but didn't render him undraftable. The performances combined with making himself a lightning rod did the trick IMO.

Scouts told the Milwaukee Journal Sentinel that they don’t see Sam’s game transitioning to the NFL.
“Most of his production was hustle stuff,” an NFC personnel official told the Journal Sentinel. “There’s production, but he’s short, he’s not a really good athlete and he doesn’t play good against the run.”
He continued: “He’s kind of a one-task pass rusher. Just run up the field. And they swallow him up and kind of push him around.”
One NFC personnel director stated that Sam doesn’t have a position in the league.
“He’s not a linebacker, and he’s really not a defensive end,” the personnel director told the Journal Sentinel.
An AFC executive said Sam was “short and slow.” Sam stands at 6 feet 2 inches and weighs 262 pounds.
